Scrumptious Brunches

Mornin’ y’all!

The last two days have been filled with warmth and happiness. Our daughter has been happily playing and chattering constantly, we’ve had much needed time off from our jobs to rest and there’s been delectable brunches my husband and I have made for each other. It has truly been a blessing.

img_4900Yesterday the hubby surprised us with the most gourmet version of BLTs I have ever had! Heirloom cherry tomatoes (purple, orange, yellow, red), organic spinach and romaine lettuce, bacon of course and my homemade bread combined to form the most perfectly satisfying brunch! Even Stephie ate some spinach! Score.


img_20170121_111912_827Then I saw a video on Instagram about how to make breakfast bites. I got some Annie’s crescent puff pastries, eggs, bacon, sharp cheddar cheese and spinach.

Heres what you do:
Roll out the puff pastry into four squares, pinching the edges up to hold in the fillings; poke bottoms with fork. After those have baked 10-15 minutes on 350F, crack one egg into each, crumble bacon around egg and add cheese and spinach. Bake at 350F until the egg is done to your liking (we like ours cooked all the way through). Once they are finished, add more cheese and let melt. Then garnish with black pepper and red pepper flakes if desired (we use them on everything).

These are so satisfying! Crunchy, buttery, filling, warm…perfect! I highly recommend them. Experiment with your favorite toppings! Try mushrooms, sausage crumbles, tomatoes…anything you and your family like. But let me warn you – they won’t last long!

I am so thankful for these simple pleasures in life. Eating is so satisfying especially when that food is delicious, nutritious and made with love. Don’t feel guilty for these pleasures! Even the Son of Man – God in human flesh, Jesus Christ – grew hungry and ate. Moreover, He is preparing a feast for His people in Heaven one day soon! (Matthew 21:18, Revelation 19:9)

One of my favorite books of The Bible, Ecclesiastes, commands us:
“So I commended pleasure, for there is nothing good for a man under the sun except to eat and to drink and to be merry, and this will stand by him in his toils throughout the days of his life which God has given him under the sun.” ( Ecc 8:15).

The book of Ecclesiastes is an especially important one for us to live by because it helps us to remember that the things of this world are temporary (James 4:14). There always has and always will be suffering, toil and bereavement while we are here. But the beauty of Ecclesiastes is its reminder to take pleasure in the simple things. Yes, this life is fleeting so we let us not forget the good times given while dealing with the bad. We must love God, our spouses and children, and enjoy what we’ve been blessed with. So, find pleasure in one of life’s great comforts: eating!
