Eggies

Weeks have gone by since my last post. It seems this crazy thing called life has taken priority over my amateur attempt at blogging! Oh the horror! The horror!

On a more serious note, eggies. Now that it is warm and spring has sprung we get a steady supply of local free-range eggs from a generous friend. They are quite eggquisite, wouldn’t you agree?

So whilst in surplus I decided to put all of my eggs in one basket and make a most beloved food item for us: dressed eggs (deviled eggs just sound so….devil-y.. “Get thee behind me, Satan: thou art an offence unto me: for thou savourest not the things that be of God, but those that be of men” (Matthew 16:23)

They lasted about 3 days between the 3 of us (yes even our 4 year old loves them!). So if you have eggs you need to use dressed eggs are the way to go. So simple, so creamy, so rich and decadent. Dare I say eggceptional?

Here’s what you do:

Mash the hard-boiled egg yolks with mayonnaise, powdered mustard, salt, pepper and water until you reach your desired consistency and taste. Garnish with a sprinkling of smoked paprika.

Also, since I have been on a no/low gluten kick I wanted to utilize the local eggs in an eggstravagant way. I made these oh so rich and chocolatey avocado cookies. Pure eggstacy.

Here’s what you do:

  1. Mash together 2 ripe avocados and 1 cup coconut sugar until combinedDSC_1605
  2. Mix in 1 egg
  3. Mix in 1/2 cup cocoa powder and 1 tsp baking soda
  4. Fold in 1 bar of chocolate chunks (I used Vosges Super Dark Coconut Ash & Banana

Preheat oven to 350° F. Shape dough into cookies and bake until an inserted toothpick comes out clean (for me it was about 25 minutes). Let cool completely. They will condense down into a dense, rich chocolate delight.

I have definitely let fear and anxiety get ahold of me this last week. Being in this world but not of it (John 17:16)- a world that hates God- it is easy to let fear cripple those who trust in Him; especially those who stand up against the ways of the world and hold fast to the authority of the inerrant Book of Books-The Bible. Let this verse be a reminder to us. Do not worry about tomorrow, focus on today. After all, we have enough to worry about today! And The Lord God is always with us. He preserves His saints. We will persist!
