Perfect Parfaits

Evening y’all!

Rich, simple, delicious, fresh & sweet – everything you want in a dessert!

The hubby and I wanted some ice cream but since we splurged on pizza for dinner, ice cream seemed like a bit much. Fruit (my favourite!) was on sale at the store so we bought some strawberries, raspberries and blueberries. I surprised him with the most delicious simple and satisfying dessert – these perfect parfaits! The smooth rich cream pairs delightfully with the tart fresh berries.

1. Thoroughly wash your fruit.

2. Pour whipping cream into a bowl and add sugar to taste (we don’t like ours very sweet so I only used 1/2 tsp confectioners sugar). Whip with a whisk until thickened.

3. Mix or alternate layers of fruit with cream. The layers really give this a beautiful mix of color!

For mine I put a dollop of cream on the bottom of my glass, added the strawberries, dolloped more cream over the strawberries, added the blueberries, then more cream, and finally topped with raspberries.

Fruit is woven throughout the scripture. Jesus Christ was the first fruits of the resurrection (I Corinthians 15:23). Eve ate of the forbidden fruit in the Garden of Eden (Genesis 3:6). Jesus Christ cursed a fig tree for not bearing fruit whilst He was hungry (Matthew 21:18-22). Furthermore, The Lord our God commands us to eat fruit and has from the beginning of humanity: “And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat.” (Gen 1:29-30).  Therefore, make some fresh fruit parfaits for yourself and those you love. For we are not only to eat of fruit, but to bear fruit through Christ: “I am the vine, ye are the branches: He that abideth in me, and I in him, the same bringeth forth much fruit: for without Me ye can do nothing.” (John 15:5).
